Keto Cauliflower Skewers With Bacon

These cauliflower skewers are tossed in Parmesan cheese and aromatic chives then wrapped in bacon and baked until crisp and caramelized. Perfect as a side, snack or even lunch served with a green salad!

Ingredients

  • Bacon (12 slice - 6" long)
  • Parmesan Cheese (2 tablespoon, grated)
  • Cauliflower (1 small - head - 4" diameter)
  • Chives, Dried Or Dehydrated (1 teaspoon)
  • Olive Oil (1 tablespoon)
  • Salt, Sea Salt (¼ teaspoon)
  • Black Pepper (⅛ teaspoon)

Instructions

  • Cover 4 wooden skewers in water to soak.
  • Dice the cauliflower into 12 even sized florets. Add to a pan of boiling water and boil for 3 minutes. Drain and immediately submerge in ice cold water to stop the cooking process. Drain and pat dry.
  • Preheat the oven to 400 degrees Fahrenheit.
  • Add the cauliflower florets to a mixing bowl and sprinkle over the Parmesan, chives, salt and pepper. Drizzle with the olive oil and use your hands to rub the seasonings into the cauliflower.
  • Wrap each individual floret in a slice of bacon then add three bacon wrapped florets to each skewer.
  • Arrange the skewers across a shallow oven tray and bake for 20-25 minutes until the cauliflower is tender and the bacon is crisp, turning halfway through.
