Keto Eggless Chocolate Chip Cookies

These eggless cookies use almond butter in place of flour and flax in place of egg to bind. With a chewy texture, these are perfect for snacking or a post dinner treat. Please note that as the cookies do not contain eggs they may be slightly crumblier than a regular cookie but just as tasty!

Ingredients

  • Water (2-½ tablespoon)
  • Cocoa Powder, Unsweetened (1-½ tablespoon)
  • 100% Cacao Unsweetened Dark Chocolate Baking Chips by Pacha (1-½ tbsp)
  • Almond Butter, Unsalted (1 cup)
  • Flaxseeds Whole And Ground (1 tbsp, ground)
  • Lemon Juice (1 teaspoon)
  • Baking Soda (½ teaspoon)
  • 100% Pure Erythritol by Now (⅓ cup)
  • Salt, Sea Salt (⅛ teaspoon)

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit and line a shallow oven tray with baking paper.
  2. Add the ground flax to a small mixing bowl with the water and set aside for 5 minutes to gel.
  3. Whilst the flax is gelling, add the almond butter, erythritol, baking soda, cocoa powder, lemon juice and salt to a mixing bowl. Beat together until well combined.
  4. Add the flax egg to the dough and stir well.
  5. Add in the chocolate chips. Stirring evenly throughout the dough.
  6. Divide the dough into 14 even balls and arrange across the lined oven tray. Press down gently into individual cookies.
  7. Transfer to the oven to bake for 10-12 minutes and then allow to cool completely and firm up.
