Ingredients
- Avocado (1 avocado, California)
- Mayonnaise (3 tablespoon)
- Curry Powder (½ tsp)
- Ground Chipotle Chile by Spice Islands (½ tsp)
- Kosher Salt (½ teaspoon)
- Rotisserie Chicken (4 cup, cooked, diced)
- Cucumber (1-½ medium)
- Celery (½ cup, diced)
- Lime Juice Raw (1-½ tablespoon)
- Cilantro (¼ cup)
Instructions
- Remove pit and skin from the avocado and smash it in a large mixing bowl along with mayo, curry powder, chipotle powder and salt.
- Cut rotisserie chicken into small dices. As well as the cucumbers and celery.
- Combine all ingredients in the large mixing bowl and add lime juice and cilantro. Taste for seasonings and adjust to your liking adding more salt, lime juice, curry or chipotle powder to your liking!
