Ingredients

  • Cream Cheese (4 ounce)
  • Butter, Salted (2 tablespoon)
  • Stevia In The Raw, Bakers Bag (¼ cup)
  • Raw Egg, White (1 large)
  • Vanilla Extract (¼ teaspoon)
  • Coconut Flour (½ cup)
  • Baking Powder (½ teaspoon)
  • Strawberries (16 slice)

Instructions

  1. In a stand mixer with a paddle attachment, cream together the cream cheese, butter, and stevia. Mix until you have a creamy, lump free batter.
  2. Mix in the egg white and vanilla. Again, make sure you mix until there are no lumps.
  3. Mix in the coconut flour and baking powder. You should end up with a fairly sticky but workable batter.
  4. Transfer the batter to a piece of parchment or wax paper. Use the paper to roll the batter into a rectangular log (you can also make a round log if you prefer) about 8 inches long. Wrap up your log and set it in your freezer for 30 minutes.
  5. While your cookie log is setting, prepare 16 slices of strawberry. Pat them dry with a paper towel and leave them out to air dry for the remainder of the recipe. When you’re ready to bake your cookies, preheat your oven to 350 degrees.
  6. After your cookie log has set, slice the log into 16, ½-inch thick cookies and lay them on a sheet tray lined with parchment paper. The cookies should be about 2-bite cookies in size. Bake the tray of cookies for 8 minutes (no strawberries yet).
  7. After the first round of baking, press a strawberry slice into each cookie gently. If any cracks appear on the edge of the cookies, you can gently press them back together. Don’t push the strawberries too hard into the cookie.
  8. Bake for a final 10 minutes. Let the cookies cool completely before eating. It is best to store your completely cooled cookies in an airtight container in the refrigerator.
