Ingredients
- Swiss Cheese (3-½ ounce)
- Chicken Breast, Skin Removed Before Cooking (1 pound)
- Olive Oil (1 tablespoon)
- Unsalted Butter (1 tablespoon)
- Garlic (1 clove)
- Chicken Broth, Bouillon Or Consomme, Ready-to-serve Can (⅓ cup)
- Food Cupboard Home Baking Almonds Ground by Sainsbury's (1-½ ounce)
- Parmesan Cheese (¼ cup)
- Heavy Cream (¼ cup)
- Cream Cheese Spread (¼ cup)
- Salt, Sea Salt (¼ teaspoon)
- Black Pepper (⅛ teaspoon)
Instructions
- Preheat the oven to 400 degrees Fahrenheit.
- Add the ground almonds to a mixing bowl with the Parmesan and season. Stir to combine and set aside.
- Heat the olive oil in a large pan over a medium heat. Dice the chicken and add to the pan. Brown the chicken all over and cook through. Keep warm and set aside.
- To prepare the sauce, melt the butter in a small pan over a medium heat and add 1 minced garlic clove, sweating until fragrant.
- Add the cream cheese and stir through until melted.
- Add the stock and cream and stir well to combine. Bring to a gentle boil then simmer for 3-4 minutes to thicken.
