- Sundried Tomatoes Packed In Oil Drained (3 piece)
- Tomato Sauce (2 tablespoon)
- Goat Cheese, Soft (1 ounce)
- Oregano, Dried (½ teaspoon)
- Basil, Fresh (½ tablespoon)
- Olive Oil (½ tablespoon)
- Cauliflower (⅓ medium - head - 5" to 6" diameter)
- Red Onion (¼ medium - 2 1/2" diameter)
- Salt, Sea Salt (⅛ teaspoon)
- Black Pepper (⅛ teaspoon)
Instructions
- Slice the cauliflower into two even steaks, a half inch thick. Add the cauliflower to a pan of boiling water and simmer until the steaks are tender. Drain the water and pat dry.
- Preheat the oven to 400 degrees Fahrenheit.
- Divide the passata evenly between the two cauliflower steaks.
- Crumble the goats cheese over the two steaks and sprinkle over the dried oregano.
- Finely slice the sundried tomatoes and onions and arrange over the goats cheese.
- Finely slice the olives and arrange over the sundried tomatoes.
- Drizzle with the olive oil and transfer to a shallow oven tray. Bake for 8-10 minutes until the cauliflower starts to turn golden and is hot through.
