Ingredients

  • Food Cupboard Home Baking Almonds Ground by Sainsbury's (12 ounce)
  • Maple Flavored Syrup by Lakanto (1 tablespoon)
  • Raw Egg Whole (1 medium)
  • Lemon Juice (1 teaspoon)
  • Vanilla Extract (1 teaspoon)
  • Baking Soda (½ teaspoon)
  • Butter, Unsalted (½ tablespoon)
  • 100% Pure Erythritol by Now (⅓ cup)
  • 100% Unsweerened Dark Chocolate Baking Chips by Pascha (¼ cup)
  • Cream Cheese Spread (¼ cup)

Instructions

  1. Add the cream cheese, ground almonds, erythritol, vanilla extract, lemon juice, baking soda, syrup, egg and butter to a food processor and blend to form a dough.
  2. Transfer the dough to a mixing bowl and stir through the chocolate chips. Cover and refrigerate for 15 minutes.
  3. Preheat the oven to 350 degrees Fahrenheit and line a shallow oven tray with baking paper. Roll the dough into 20 even balls and arrange them across the oven tray. Press down into a cookie shape about half a centimeter thick.
  4. Bake the cookies for 12-15 minutes until lightly golden and set aside to cool completely and firm up.
