Ingredients

  • Scallions (8 medium - 4 1/8" long)
  • Bacon (4 slice - 6" long)
  • Garlic (1 clove)
  • Olive Oil (1 tablespoon)
  • Lemon Peel Or Zest Raw (1 tsp)
  • Parmesan Cheese (1 tablespoon, grated)
  • Salt, Sea Salt (¼ teaspoon)
  • Black Pepper (⅛ teaspoon)

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Bunch the scallions together in pairs so you have four lots of two.
  3. Wrap one strip of bacon tightly around each pair of scallions. Arrange the bacon wrapped scallions across a shallow oven tray.
  4. Crush the garlic and sprinkle over the scallions along with the lemon zest, parmesan, salt and pepper.
  5. Transfer to the oven and bake for 18-20 minutes or until the scallions are tender and the bacon is crisp and golden.
