Ingredients

  • The Ultimate Icing Sugar Replacement by Swerve (¾ cup)
  • 100% Cocoa Special Dark by Hershey's (½ cup)
  • Heavy Cream (1 cup)
  • Original Coconut Milk Unsweetened by Silk (1 cup)
  • Baking Aids Xanthan Gum by Bob's Red Mill (2 teaspoon)
  • Salt, Sea Salt (⅛ teaspoon)
  • Vanilla Extract (½ teaspoon)

Instructions

  1. Combine all dry ingredients in a small saucepan together with a whisk.
  2. Add in some of the coconut milk to make a thick paste.
  3. Then add in all the milk and cream and whisk well.
  4. Place over low heat until the mixture comes together and thickens. You most likely will not need to heat the mixture much at all. It should still be cool to the touch. Fill popsicle molds and freeze until solid 6-8 hours or overnight.
  5. Run the molds under warm water to release the popsicles and serve immediately!
